Monday Menu


Hey guys. Sorry I've been off the radar lately. February has been busy and juggling lots of commitments has pushed the blog to the back burner. But, I'm back and ready to share lots of what we have been up to over the month of February starting with our menu for this week.



To be honest, I've really been in a rut with the menu the last few weeks. I have been unmotivated in the kitchen which has lead to more eating out and not the healthiest dinner choices. But it's never too late to get back on track with healthy meals so here is what we are making this week.

Monday: Grilled white fish with this Brussels Sprout salad.
This Brussels Sprouts, Cranberry and Quinoa Salad is delicious, easy to make, healthy, and naturally vegan and gluten-free!


Tuesday: Teriyaki Cauliflower Rice Bowls

Wednesday: Baked Sweet Potato with Broccoli  (I'm going to substitute buttermilk and cheddar for almond milk and feta or goat cheese)
