Week 3- September is for salad

I can't believe it's actually September already. Most of August I was living out of a suitcase and the days were passing at an alarming rate. September is always a memorable time of year for so many reasons. Today it's the beginning of new fitness and healthy eating goals. Some of the things we use to achieve these goals are...

 
Thanks to our new grill, this week became the week of grilled anything salad... 

 
 Monday:
Salad- grilled sweet potatoes, bell pepper and onion with roasted chickpeas and kale
Dressing- homemade chimichurri  
 Tuesday:
Salad- kale, raspberries, carrots, peanuts, leftover chickpeas
Dressing- juice of 1 lemon, 1 tsp sriracha, 1tsp olive oil, salt and pepper to taste
Wednesday:
Salad-grilled brussels sprouts and scallions with arugula, carrots, almonds and pecorino romano with some quinoa under there somewhere
Dressing- homemade dairy-free ceasar  
Thursday:
Salad: Gilled zucchini and corn with black beans and avocado and cabbage slaw 
Dressing: salsa

After four days of healthy eating we rewarded ourselves with some lazy beach time and a big Sunday brunch at home.  

Grilled peaches, turkey breakfast sausages and fluffy pancakes. I used this recipe  and I substituted the sugar for maple syrup and used two egg whites instead of whole eggs. I also used whole wheat flour and added vanilla, cinnamon, and nutmeg because why not!
